Sushi at Edokko

Miso soup

One of the hazards of having a palate of discerning taste is that I have daughters with palates of discerning taste. I can’t imagine how that happened.   One of our favorites is sushi. The oldest spawn blames me for getting her hooked on this Japanese specialty. Fortunately, it’s possible to have a decent sushi spread even in the land-locked state of Kansas. This meal was enjoyed at Edokko, thanks to a Groupon. Hey, when you’re ordering sushi for three,…. continue reading

Chickpea Kale Curry

The other day I needed a way to quickly use up a bunch of kale I had received in my organic box. I still have a ton of pizza kale chips, and I wasn’t in the mood to fire up the dehydrator. The answer? Curry, of course.   I had one piece of frozen garlic naan from Trader Joe’s that I had with my first bowl (no photos, as I was absolutely starving at that point). For my next meal,…. continue reading

Utah Escape

I spent a week this past summer in Utah. Provo, to be exact. There were adventures, mountains, caves, waterfalls,  random acts of cooking (of course!), and escape.     Never mind what I was escaping. It’s an annual tradition for me, and this year’s evasion needed to count. The answer: Climbing Mount Timpanogos. Not a shabby goal for one born of the flatlands. Perhaps the low oxygen level was to blame, but I was high off of that accomplishment for a good…. continue reading

Potato Leek Soup for the Scratchy Throat and a Magic Potion

Sick meal

Being sick is no fun. We can all agree on that at least, yes?   The past two days I’ve felt pretty puny. It’s really just a scratchy throat and accompanying cough, but when you don’t get sick very often it might as well be hell. Today I’m sharing a couple of my favorite tried-and-true symptom subdue-ers.   The first recipe I have for you today is potato leek soup. It just happened to turn out vegan (until I topped…. continue reading

A Visit to the Faire, circa 2012

TARDIS

No recipes today, but I wanted to share a couple of recent outings. This past weekend, I ventured to the Kansas City Renaissance Festival with fellow time-travelers Amber and Hannah. I’ve been going every year (usually multiple times) in I can’t even imagine how long. This event includes six weekends of costumes, shows, and shopping all centered around the 14th-17th centuries.     After buying our tickets to two very important events, we started to meander. There was a Doctor Who…. continue reading

Repurposing Leftovers: Green Bean Stir-Fry & Rice and Lentil Balls

green bean stir-fry prep

Along with the ratatouille from my previous post, I also turned a couple of leftover dishes from my Conveniently Natural order into something new. For those unaware, Conveniently Natural is a vegan meal delivery service in the Kansas City area. While not vegan myself, I still enjoy their meals during weeks that I’m especially busy. After all, good food is just that: Good food. This past weekend I still had leftovers from two of the dishes: Green Beans Almandine and Wild…. continue reading

Sushi Night and Miso-Glazed Fruit Topping

Miso-Glazed Nectarines over Chocolate Ice Cream

Tonight’s recipe is a super-simple vegan dessert (sneak-peek on the left!). Three ingredients, minimal babysitting, and tons of flavor….but more on that in a few paragraphs.     This week has been a good one so far (all 48 hours of it). Monday started out with my deliveries from Door to Door Organics and Conveniently Natural. I had customized my organic box to accommodate a Monday night gathering: Sushi night with Amber (Almost Vegan) and Hannah (Wayfaring Chocolate). In addition to…. continue reading

A Warm Welcome with Ratatouille

ratatouille

The first thing I want to do is welcome you to the brand new AntiChef home. Go ahead and make yourself at home, and please forgive the mess. I’m still unpacking! I have managed to complete the arduous task of categorizing all my existing recipes, and you can find links to various recipe types under the Recipes link above. You can also easily search by entering keywords in the search field to the right. Also to the right is the…. continue reading

Mexican-Style Slaw and Other Raw Selections

Another long absence, but these things do happen. I have a new recipe to share in a few, but I want to start by showing a few of the raw items I made during a food prep spree I went on last week. First was a recipe straight off my friend Amber‘s website, Almost Vegan. I originally was going to make plain coconut butter from her book, but given the sheer number of strawberries this time of year, I instead…. continue reading
